Organic Avocado Soup

Organic Avocado Soup-This is delicious!!!

Ingredients:

1/2 cup chopped organic yellow onion

2 organic garlic cloves, chopped

1 tbsp. organic grass-fed butter *use plant-based butter for vegan option

29oz organic vegetable broth

2 medium organic russet potatoes, peeled and cubed

1/8 tsp. chipotle powder

¼ tsp. fresh thyme, chopped

1/2 tsp. himalayan salt

1/4 tsp. pepper

2 medium ripe organic avocados, peeled and quartered

Directions:

1. In a large saucepan, saute onion and garlic in butter until tender. Add the broth, potatoes, seasonings, salt and pepper; bring to a boil. Reduce heat; cover and simmer for 15-25 minutes or until potatoes are tender. Remove from the heat; cool slightly.

2. Place avocados in a blender; add potato mixture. Cover and puree. Return to the pan; heat through.
