Roasted Brussel Sprouts With Garlic, Lemon & Feta

Super simple, healthy recipe that tastes great!

Serves 4

Ingredients:

4 cups organic Brussel Sprouts

1 organic Lemon

1/2 cup Extra Virgin Olive Oil

4 organic Garlic Cloves

1/2 cup Feta Cheese *try Violife Feta for a plant-based option

Himilayan Salt & Pepper to taste

Instructions:

1. Clean and cut brussel sprouts into halves. Into a small bowl, press garlic, zest the lemon and squeeze all of the juice from it.

2. Add olive oil, pepper and salt to the ingredients. Toss brussel sprouts in with the oil mixture.

3. Bake seasoned brussels at 425F for 15 minutes or until they are golden brown. *If you want to crisp up the outsides, put on broil for about 4 minutes.

4. Sprinkle feta into the baked brussels sprouts and serve!

***For a nice “crunch”, sprinkle with chopped roasted pistachios!
