Hearty Immune-Boosting Bean Soup

SERVES 4

Ingredients:

1/4 cup extra virgin olive oil

1 red onion, diced

4 garlic cloves, finely chopped

2 medium carrots, diced

2 tbs fresh ginger, finely grated

4 cups cooked (or from cans) your choice of organic beans

1 tsp turmeric powder or fresh grated

6 cups vegetable broth *you can use bone broth as well

2 tbs miso paste

1 small bunch of kale, massaged and roughly chopped

1 small bunch fresh parsley, chopped (stems removed)

1 fresh lemon

Salt and pepper to taste

Instructions:

1.  In a large saucepan, heat the oil and onion on medium until onion has slightly browned.

2.  Add in the garlic and cook for another 1-2 minutes, followed by the carrots, ginger, beans and turmeric. Cook for 5-7 minutes.

3.  Pour in the vegetable broth and add the miso paste. Stir to combine all ingredients.

4.  Bring to a boil and simmer for 10 minutes.

5.  Add in the chopped kale and parsley and season to taste.

6.  Once the kale and parsley softens a little, serve into bowls and squeeze some fresh lemon juice on top to brighten up the flavors!
