Burgers With Spiked Mayo & Crunchy Kim Chi!
SERVES 4
Ingredients:
16 oz grass fed organic ground beef
5 tbsp lightly drained finely chopped kimchi, divided
1 avocado, peeled, pitted and thinly sliced
4 burger buns, toasted
1 small organic cucumber, seeded and thinly sliced on the diagonal
PANTRY STAPLES:
3 tbsp mayonnaise, divided
2 tsp toasted sesame oil, divided
2 tsp tamari, divided
½ tsp siracha, or to taste
1/8 tsp himilayan salt, or to taste
1/2 tsp ground black pepper
1 tsp brown rice vinegar
Preparation:
In a large bowl, combine beef, 3 tbsp kimchi, 1 tbsp mayonnaise and 1 tsp each sesame oil and tamari. Shape into 4 patties. Season on both sides with salt and pepper. Cook burgers 5 to 7 minutes or until done to desired taste.
Meanwhile, in a small bowl, stir together vinegar, remaining 2 tbsp mayonnaise, 2 tbsp kimchi, 1 tsp sesame oil, 1 tsp tamari and siracha.
Lay avocado slices over cut side of each bun bottom. Top with patty, cucumber slices, and sauce. YUM!
