Hasselback Caprese Romas

Serves 4

INGREDIENTS:

  • 4 organic Roma tomatoes

  • 16, 1/4 inch slices fresh mozzarella cheese

  • 1/4 cup fresh basil leaves

  • pinch of red chili flakes

  • 2 tablespoons extra virgin olive oil

  • 1/ 4 cup homemade or store-bought pesto *we have some delicious pre-made ones!

  • Himilayan salt and ground pepper to taste

  • balsamic glaze

DIRECTIONS:

  1. Cut a little slice off the bottom of each Roma tomato so it sits flat on a dish.

  2. Next cut 5 slits in each tomato being careful not to cut all the way through the tomato and stuff each slit with a piece of mozzarella and basil.

  3. Season with salt, pepper and red chili flakes

  4. Drizzle with olive oil and balsamic glaze

  5. Top with pesto and serve!
