Easy "Cheesy" Roasted Broccoli & Cauliflower

Easy Roasted Broccoli & Cauliflower

Serves 6

Ingredients:

  • 1 head cauliflower cut into bite-sized florets

  • 1 head broccoli cut into bite-sized florets

  • 2 tbsp. extra virgin olive oil

  • 2 tbsp. butter melted

  • 2 cloves garlic crushed

  • 1 tsp. lemon zest

  • 1 tsp. salt or to taste

  • ½ tsp. black pepper or to taste

  • 2 tbsp. nutritional yeast *you can also use a good quality parmesan if you like

Instructions:

  1. Preheat oven to 450°

  2. Whisk oil, butter, crushed garlic, zest, salt, and pepper together in a small bowl.

  3. Add cauliflower and broccoli to a large bowl and toss with sauce until well coated.

  4. Line a large baking sheet with parchment paper. Spread veggies on the pan in a single layer and bake on middle rack for 20 minutes. Turn oven to broil and cook for 5-7 more minutes or until edges begin to crisp and brown slightly. Sprinkle with nutritional yeast and enjoy!
