Apple Walnut Green Salad

Apple Walnut Green Salad-serves 6-8

INGREDIENTS:

For The Salad-

  • 5 ounces (about 5 cups) spring greens salad mix

  • 1 large or 2 small Granny Smith or crisp red apple(s), sliced thin

  • ⅓ cup dried cranberries

  • ¼ cup maple glazed walnuts*

  • 1/3 cup goat cheese crumbled

  • 1/3 cup bacon bits

 

     For The Dressing/Vinaigrette-

·         2 tbsp raw apple cider vinegar

·         ¼ cup extra virgin olive oil

·         1 tbsp dijon mustard**

·         1 tbsp apple butter

·         2 tsp maple syrup

·         ½ tsp salt

·         ¼ tsp fresh ground black pepper

·         ½ tsp garlic powder

·         ¼ tsp dried thyme

 

    DIRECTIONS:

   Toss Salad ingredients together in a large bowl. Add all dressing ingredients to a jar and shake until blended. Drizzle over salad if you are eating right away or serve salad with dressing on the side!

**delicious with truffle mustard instead of plain dijon
