Super Green Pasta Recipe!
Green~supercharged comfort food that you make in your blender! What a way to get your daily greens! 😋
INGREDIENTS:
* Your favorite pasta (2 servings)
* 1 cup broccoli florets
* 1 packed cup of leafy greens (spinach, kale, swiss chard etc.)
* 1/2 cup frozen peas
* handful of fresh basil
* 1 cup pasta water
* 1 cup raw no salt cashews
* himalayan salt
* 1-2 garlic cloves
* 1/4 cup nutritional yeast
* optional toppings: grated parmesan, tomatoes, more veggies
HOW TO MAKE:
Cook pasta in well salted water. When done, remove pasta from pot with a large spoon. Next add the broccoli, leafy greens and peas to the pasta water to soften for about 5 minutes, and drain over a large bowl to retain the pasta water. Add strained veggies to a blender. Add the cashews, salt to taste, garlic, nutritional yeast, basil and pasta water to the blender. Blend for 1-2 minutes until silky smooth, adding more pasta water to get things moving if needed. Once smooth pour over the pasta and mix well.
Serve with optional toppings and enjoy!
