Bacon Wrapped Water Chestnuts
-The balance of sweet, salty, smokey and crunchy can’t be beat! Our version uses fresh dates and coconut aminos with savory smoked bacon. It’s a perfect appetizer for any party!
INGREDIENTS:
2-5oz cans of water chestnuts
3 tbsp. coconut aminos
8oz pack organic applewood smoked bacon
5 pitted fresh medjool dates
1/3 cup water
1/3 cup ketchup
fresh parsley for garnish
INSTRUCTIONS:
Preheat your oven to 400 degrees.
Marinate water chestnuts in the coconut aminos for 30 minutes. (reserve liquid)
Cut bacon into thirds and wrap around water chestnuts, securing with an oven safe toothpick.
Place a cooling rack over a rimmed baking sheet lined with parchment and spread the wrapped water chestnuts on the rack.
Bake on middle rack for 30 minutes and begin the sauce.
In a food processor or blender combine dates, ketchup and water until smooth. Add reserved amino liquid from marinade and blend again.
After 30 minutes remove chestnuts from oven and dip each one in the sauce until coated nicely. Drain the baking sheet of any grease and return the sauce covered chestnuts to the oven and bake for an additional 15 minutes. Sprinkle with fresh parsley and serve hot with any leftover sauce!
*any extra marinated chestnuts can be refrigerated and added to a Asian stir fry or rice!
