GRILLED PEACHES
Ingredients:
4 ripe peaches, halved and pitted
Extra-virgin olive oil, for brushing
½ cup walnuts, toasted and crushed
½ tsp cinnamon
¼ tsp sea salt
Vanilla ice cream or one of your choice
Instructions:
Preheat a grill to medium heat.
Brush the cut side of the peaches with a little olive oil and grill cut-side down for 3 minutes, until char marks form.
In a small bowl, combine the walnuts, cinnamon, and salt.
Remove the peaches from the grill and serve with vanilla ice cream and sprinkle with the walnut mixture.

EASY PEACH COBBLER
Ingredients:
6 large or 7 medium peaches, thinly sliced
1 1/2 teaspoons fresh lemon juice
3/4 cup all purpose flour
¼ cup cane sugar
1/4 teaspoon cinnamon
¼ teaspoon baking soda
¼ teaspoon salt
¼ cup melted coconut oil or unsalted butter
1 teaspoon vanilla extract
Vanilla ice cream, for serving
Instructions:
Preheat the oven to 400°F and grease a 9x13-inch baking dish with coconut oil.
Layer the peaches into the bottom of the baking dish and drizzle the lemon juice over the peaches.
In a medium bowl, mix the flour, sugar, cinnamon, baking soda, and salt. Add the coconut oil and vanilla and combine until the mixture forms a crumbly dough. Sprinkle over the peaches and bake for 30 minutes, or until the mixture is just lightly browned on top and the peaches are juicy.
Serve warm with vanilla ice cream.

PEACHES & CREAM OVERNIGHT OATS
Ingredients:
2 ripe peaches, divided
2 cups milk
1 tbsp grade A maple syrup, plus more to taste
1 tsp vanilla extract
1/4 tsp cinnamon
pinch of salt
2 cups rolled oats
2 tbsp chia seeds
1/4 cup yogurt
Instructions:
Quarter one peach and finely dice the other; you can peel the peaches if you’d like, but I kept the skin on. Add the quartered peach to a high-speed blender along with the milk, maple syrup, vanilla, cinnamon, and salt. Blend on high for 45-60 seconds, until the peaches are finely blended into the milk.
Mix: Add the oats, chia seeds, and yogurt to a large bowl. Pour the peach milk into the bowl, then stir until everything is combined. Let sit for at least 5 minutes, to allow the oats and chia seeds to absorb some of the liquid. Once thickened, add the diced peach into the oats and fold until evenly distributed.
Store: transfer the oats to 2-3 jars or other containers, then store in the fridge for at least 4 hours, preferably overnight. Enjoy cold or warm; leftover will keep in the fridge for up to 5 days.
