Easy Refrigerated Pickled Veggies

A great way to perk up the odds and ends in your produce drawer! Delicious with bbq and perfect for a picnic!

Makes 1.5 quart jar

The Vegetables:

About 1.5 lbs. (more or less) combination of cauliflower florets, cucumbers, red onions, green beans, carrots, bell peppers, dill or fennel sprigs

Optional for spicy veggies: jalapeño, serrano, or red chili peppers, garlic

The Brine:

1 cup apple cider vinegar

1.5 cups water

2 tbsp pickling spice *we sell in our bulk jars

2 tsp salt

2 tbsp sugar

Fill glass jar with cut veggies. Heat brine on stove and add to jar. You can lightly shake jar to mix. Marinate in refrigerator for 48 hours and enjoy up to two weeks!
