Up-Beet Poke Bowl With Yum Yum Sauce

Serves 4

INGREDIENTS FOR BEET POKE:

2-8.8oz packs of organic cooked Love Beets *found in the produce department, cut into cubes

3 tbsp Coconut Aminos

1 tbsp toasted sesame oil

1 tbsp rice vinegar

-Toss all together and set aside to marinate for at least 1 hour

 INGREDIENTS FOR BOWL:

1 cup organic short grain rice, cooked with pinch of salt

1 10oz bag organic frozen edamame

1 medium cucumber, diced

1 cup pineapple, diced

1 cup organic cabbage, shredded

4-8 radishes depending on size, sliced

Handful of microgreens

Sprinkle of black and tan sesame seeds

-Arrange all ingredients in a bowl including marinated beets

 INGREDIENTS FOR YUM YUM SAUCE:

½  cup Vegenaise

1 tbsp. ketchup

1 tsp. siracha

2 tsp mirin

1 tsp rice vinegar

½ tsp paprika

1 tsp garlic powder

-Whisk all ingredients together until smooth and refrigerate for at least 1 hr for best flavor. Serve over or alongside your “poke” bowl and enjoy!
