Probiotic Strawberry-Banana Popsicles

Makes 10 popsicles *varies depending on mold size

INGREDIENTS:

  • 2.25 cups canned unsweetened coconut milk

  • 1.25 cups organic strawberries, halved

  • 1 organic banana peeled

  • 3 tbs pure maple syrup

  • 1 tsp vanilla extract

  • 1/8 tsp himalayan salt

  • 4 capsules probiotics, opened

  • 3-4 tbsp granola (optional)

EQUIPMENT:

  • 1 popsicle mold (preferably BPA free silicone molds)

  • Popsicle sticks

  • Blender

HOW TO MAKE:

Combine the coconut milk, maple syrup, vanilla and salt in a blender. Empty the probiotic capsules into the mixture and blend.

Next, add the strawberries and banana to the mixture and blend until combined. As an option, and for more color, you can leave some of the strawberries halved in the mixture.

Pour the mixture into the molds, leaving 1/3 inch room at the top of each pop.

Freeze for about 40 minutes and then add your granola, gently pushing into the mixture. Insert the popsicle sticks at this point and freeze for at least 4 hours longer. Enjoy!

***Notes: Live cultures such as L. acidophilus enter a dormant state during freezing, returning to an active state when they come in contact with body heat after ingestion.

***You can also put this mixture into a freezer safe bowl and scoop out as you like!
